Stuffed Poblano Chiles with Beans and Manchego Cheese

Ingredients
10 oz Queso Manchego Los Altos, cut in strips
1 cup Crema Mexicana Natural Los Altos
8 fresh poblano chiles, roasted, peeled and deveined
10 oz refried beans
2 tablespoons butter
2 tablespoons finely chopped onion
3 cups tomato puree
2 very ripe plantains, peeled, sliced and fried
Salt
1) Preheat the oven to 350°F.
2) Fill each chile with refried beans and the Queso Manchego Los Altos. Close with a toothpick and place in a baking dish. Bake for 20 minutes.
3) Meanwhile, melt the butter in a saucepan, sauté the onion, add the tomato puree and the Crema Mexicana Natural Los Altos. Season with salt and cook over low heat for 20 minutes.
4) Serve the chiles with the tomato sauce on top and the plantains on the side. Goes great with white rice.
