Taco Mac & Cheese Casserole
Ingredients
Los Altos Queso Menonita, grated
Los Altos Queso Cotija Molido
1 onion, small diced
2 carrots, small diced
1 bell pepper, small diced
2 serrano peppers, sliced
2 tomatoes, diced
1 avocado
1 lb ground beef
2 cups of cooked macaroni
Crispy Tortilla strips (optional)
For the cheese sauce:
1 stick of butter
1/2 cup of flour
4 cups of milk
¾ cup Los Altos Queso Menonita, grated
1) Sauté the onion, carrots, bell peppers, and some serrano pepper.
2) Add and cook ground beef with taco seasoning. Near the end of cooking add the tomato.
For the cheese sauce:
3) In a pot, melt the butter and add the flour cooking over medium heat for 2 minutes. Add milk, salt, and pepper and cook until thickened.
4) Add Queso Menonita and stir. Add the previously cooked macaroni to the sauce.
5) In a baking tray, layer the macaroni, meat, and add more cheese.
6) Bake until golden brown. If desired top with serrano chiles, tomatoes, avocado, tortilla strips, and cotija cheese. Enjoy.
