Stuffed Squash
Serves: 3
Ingredients
1 cup Los Altos Queso Oaxaca Deshebrado
1 ½ cup Los Altos Queso Panela, small diced
6 Squash
½ cup Sweet corn kernels
½ cup Sweet Potato, baked and diced
3 Medium sized carrots
Salt and pepper to taste
1) Boil the squash and the carrots until tender.
2) With the spoon handle, scoop the pulp out of the squash, be careful not to break them apart.
3) Chop up the pulp from the squash.
4) In a medium bowl, ,mix the Los Altos Queso Panela with the corn, potatoes, carrots, pulp and add salt and pepper to taste.
5) Stuff the squash with the mix and add the Los Altos Queso Oaxaca Deshebrado cheese on top.
6) Place the squash in the oven preheated to 350⁰F.
7) Remove when the Los Altos Queso Oaxaca Deshebrado has melted on top, serve
