Refried black beans with cheese
Serves: 4
Ingredients
1 cup of black beans
1 package of Los Altos Cotija Cheese
3 cups of water
2 bay leaves
½ onion
3 tablespoons vegetable oil
4 cloves of garlic
Salt to taste
2 cups of corn tortilla chips
1. In a container with water, place the previously washed beans and let them soak overnight.
2. In a pressure cooker with water, add the beans, a quarter of an onion, the garlic, the bay leaves and cook for an hour, let cool.
3. In a pan add oil and a quarter of finely chopped onion, fry over high heat and add the beans and crush, adjust seasoning.
4. Serve with tortilla chips and add crumbled Cotija cheese.
