Refried Beans
Serves: 4 to 6
Ingredients
½ cup Los Altos Queso Fresco Del Rancho or Queso Fresco Los Altos, crumbled
1 cup Los Altos Crema Mexicana Con Sal
½ cup Lard or oil
½ cup Onion, cut into chunks
4 cups Pinto beans cooked in their liquid
1/2 cup Fried tortilla chips
1) Melt the lard in a large skillet.
2) Add the onion and sauté, stirring frequently for 5 minutes
or until golden and soft. Remove and discard onion.
3) Add half of the beans with their cooking liquid and mash in the skillet with a potato masher.
4) Gradually add the remaining beans and liquid and continue mashing to make a coarse puree until it begins to dry out.
5) Transfer to a warm platter and sprinkle with Los Altos Queso Fresco Del Rancho or Queso Fresco Los Altos.
6) Garnish with Los Altos Crema Mexicana Con Sal and tortilla chips.
Variation:
If you like the taste of onion, you can use finely chopped onion, in which
case do not discard.
