Queso Panela with Two Salsas

Ingredients
12 oz. Queso Panela Los Altos
2 roma tomatoes
6 oz. tomatillos
½ medium onion
2 garlic cloves
4 cilantro sprigs
1 serrano pepper, deseeded
4 tablespoons of water
Salt
1) Dry roast tomatoes, tomatillos, onion and garlic.
2) In the blender make the red sauce with the tomatoes, half the onion, garlic and pepper, half the water and salt. Sautee the sauce in a pan with a little of oil.
3) For the green sauce, in the blender mix tomatillos, the rest of the onion, garlic and pepper, cilantro, the rest of the water and salt. Sautee the sauce in another pan with more oil.
4) Place the Panela cheese in a serving plate; cover half of it with the red sauce and the other half with the green.
5) Serve with warm tortillas.
