Queso Oaxaca in a Clay Pot

Ingredients
12 oz. Queso Oaxaca Deshebrado Los Altos
1 chile de arbol, deseeded and deveined
1 guajillo pepper, deseeded and deveined
2 tablespoons of oil
1 teaspoon cider vinegar
1 tablespoon of finely chopped cilantro
Salt
1) With scissors cut the chiles in thin strips. Heat the oil and fry the chiles por a couple of minutes. Remove from heat; add the vinegar and season with salt.
2) Form 2” diameter circles with the shredded cheese in a clay pot. Cover with the chiles with the oil and bake for 8 minutes at 350°F.
3) Sprinkle with cilantro and serve with warm tortillas.
