Quesabirria
Ingredients
Los Altos Queso Oaxaca, grated
5 tomatoes, chopped
1/2 white onion
5 cloves of garlic, whole
5 ancho peppers, without seeds
3 guajillo peppers, without seeds
1 tsp whole black pepper
1 tsp whole allspice
1 tsp dried cumin
1 tsp dried thyme
1 tsp dried oregano
5 bay leaves
1/4 of cup of white vinegar
2 lbs boneless Short Rib
3 Tbsp of grain salt
1) In a saucepan add a little oil, tomatoes, onion, garlic, spices and peppers. Cook for 5 minutes.
2) Add half a cup of water and white vinegar and leave it on medium heat for 15 more minutes covered.
3) Let it cool for at least 5 minutes and blend.
4) In the Instant Pot, in “Sauté” mode, add oil and sear the meat on all sides.
5) Add the blended chili mixture, 8 cups of water, and salt. Use the “Pressure Cook” mode and cook for 40 minutes. Shred the meat.
6) In a hot comal add a little fat from the broth and soak the tortillas on one side. Add grated Oaxaca cheese and meat to the tortillas and fold in half.
7) Enjoy them with diced onion and minced cilantro, accompany them with the birria broth.
