Piña Ranchera
Serves: 6 to 8
Ingredients
1 cup Los Altos Queso Cotija, crumbled
1 Ripe sweet pineapple
1 Whole piloncillo
2 cups Orange juice
1) Peel the pineapple, cut away from core and dice into cubes, reserve.
2) Meanwhile, boil the piloncillo with the orange juice for 30 minutes to dissolve and reduce into syrup-like consistency.
3) Cool the piloncillo sauce and pour over the pineapple.
4) Cover with crumbled Los Altos Queso Cotija
