Grilled Corn Salad with Cotija Cheese
Ingredients
Los Altos Cotija Cheese
4 corns
1 tomato, diced
¼ red onion, small diced
1 habanero pepper, sliced
1 lime
2 tbsp olive oil
Mint, minced
1)Roast the corns on the grill with salt and black pepper.
2)Shell the corns and reserve.
3)Mix the corn kernels, tomato, red onion, habanero pepper, lime juice, olive oil, mint, and Cotija cheese.
4)Enjoy it with some tostadas.
