Fritto Misto & Jocoque Dip
Serves: 6 to 8
Ingredients
Fritto Misto Components
10 oz Los Altos Queso Panela, 3 x ½ inch sticks
5 oz Brocollini stems with florets 2 ½ to 3 inch sticks
1 Poblano, fire roasted, destemed & deseeded and cut in strips, ½ inch thick
5 oz Carrot sticks, 3 x ¼ inch sticks
7 oz Asparagus tips, 3 inch long
1 Lemon, cut into rounds, thinly sliced
1 cup All purpose flour
4 qts Canola oil to deep fry
Batter
2 cups All purpose flour
1 cup Corn starch
1 Egg
½ t Paprika
½ t Cayenne
1 T Salt
1 t Ground pepper
½ cup Olive oil
2 cups Cold XX or Negro Modelo beer
Chipotle Los Altos Jocoque Dip
1 ½ cups Los Altos Jocoque
1 T Chipotle chile en adobo, puree
4 T Mayonaise
Batter & Chipotle Los Altos Jocoque Dip
1) Combine all batter ingredients in a medium sized bowl and set aside, whisk to fully incorporate.
2) Also, combine all Chipotle Los Altos Jocoque Dip ingredients in small bowl and refrigerate.
Prepping Veggies & Cooking Fritto Misto
1) First, prep all the veggies by cooking ahead of time. Boil the brocollini, carrots and asparagus tips til tender in salted boiling water.
2) Fire roast, peel, destem and deseed poblano pepper and cut into strips.
3) Once veggies are all prepped, in a large pot, fill ½ to ¾ full with canola oil and bring oil temp to 375°F.
4) Before frying Los Altos Queso Panela and vegetables in oil, cover in flour and pat off excess.
5) Then dip each piece individually into batter then gently into the oil. Fry pieces until batter is golden in color and rotate pieces so that each side evenly cooks. Oil temperature should be within 325-375°F range to fry cheese and vegetable properly.
6) Remove and place on plate line with paper towels to remove excess oil.
7) Serve immediately with Chipotle Los Altos Jocoque Dip.
