Fritto Misto & Jocoque Dip

Ingredients

Fritto Misto Components

10 oz Los Altos Queso Panela, 3 x ½ inch sticks
5 oz Brocollini stems with florets 2 ½ to 3 inch sticks
1 Poblano, fire roasted, destemed & deseeded and cut in strips, ½ inch thick
5 oz Carrot sticks, 3 x ¼ inch sticks
7 oz Asparagus tips, 3 inch long
1 Lemon, cut into rounds, thinly sliced
1 cup All purpose flour
4 qts Canola oil to deep fry

Batter

2 cups All purpose flour
1 cup Corn starch
1 Egg
½ t Paprika
½ t Cayenne
1 T Salt
1 t Ground pepper
½ cup Olive oil
2 cups Cold XX or Negro Modelo beer

Chipotle Los Altos Jocoque Dip

1 ½  cups Los Altos Jocoque
1 T Chipotle chile en adobo, puree
4 T Mayonaise
