Queso Cotija in Pasilla Chili Sauce
Ingredients
Los Altos Queso Cotija, sliced
6 pasilla peppers
6 tomatillos
½ white onion
2 garlic cloves
1 tbs of vegetable shortening
(Optional pork shortening)
Salt to taste
1.In the comal toast the tomatillos, chilies and garlic.
2.Hydrate the chili peppers in water for 10 minutes before removing seeds and reserve the water.
3.Blend the onion, tomatillos, pasilla, and garlic with ½ cup of the reserved chili water.
4.In a pan melt vegetable shortening and pour the sauce, let it boil until thickened.
5.Add the slices of cheese and let it boil over low heat for 5 more minutes.
5.Serve and enjoy with freshly made tortillas.
