Chicken Tostadas
Serves: 4 to 6
Ingredients
1 cup Los Altos Crema Mexicana Natural
3/4 cup Los Altos Queso Cotija, crumbled
Enough oil to pan fry
12 Corn tortillas (or tostadas)
1 ½ cups Refried pinto beans
3 cups Lettuce, shredded
1 Whole chicken breast (12 oz), cooked and shredded
1 Onion, chopped
2 Tomatoes, sliced
1 Avocado, peeled, pitted and cut into strips
1 cup Salsa Mexicana
Salt to taste
1) Heat ½-1 inch of oil in a small skillet to 350°F.
2) Fry the tortillas until they are crisp and golden, 45 seconds to 1 minute on each side . Place in a colander and set aside. They can be prepared up to 1 hour before serving. (Skip this part if using premade tostadas).
3) Heat the refried pinto beans and spread each tostada with frijoles and top with chicken, lettuce, 2 slices of onion, 2 slices of tomato and a strip of avocado.
4) Sprinkle lightly with salt.
5) Place a tablespoon of Los Altos Crema Mexicana Natural on top and sprinkle with crumbled Los Altos Queso Cotija .Serve with salsa separately.
Variation: Machaca can be used in place of the shredded chicken.
