Canneloni Stuffed With Requesón

Ingredients
Building Canneloni and Sautéing The Stuffing
1 lb Dried Cannelloni
13 oz Los Altos Queso Requesón
3 T Los Altos Queso Cotija Molida
1 Onion, grated
2 Garlic cloves, chopped
Beef base, concentrate to taste
Pepper to taste
1 T Butter
5 cups Spinach, thinly sliced
3 T Flour
3 T Milk
The Sauce
4 T Los Altos Queso Cotija Molida
2 cans Tomato Sauce
¾ cup Water
1 t Soy sauce
Salt and pepper to taste
Building Cannelloni and Sautéing Stuffing
1) Boil the cannelloni until al dente in salted water, then drain, rinse with cold water and reserve.
2) To make the filling, sauté the onion, garlic, meat powder, pepper and salt together in a medium sized sauté pan with the butter.
3) Add the spinach and let it cook thoroughly.
4) Once cooked, add the Los Altos Queso Requesón and Los Altos Queso Cotija Molido.
5) Combine the flour and the water and add it to pan as well, mix thoroughly. Continue to cook until it thickens.
6) Stuff the cannelloni with the mix and transfer to a medium sized glass pan.
7) Then pour on top of the cannelloni the sauce (instructions below).
8) Place in a preheated oven at 350°F for 20 minutes and immediately serve.
The Sauce
1) Combine all the sauce ingredients and cook for 15 minutes in small sauté pan over medium heat.
2) Reserve.
