Battered Stuffed Bananas
Serves: 4
Ingredients
Battered Fried Stuffed Plantains
4 oz Los Altos Crema Mexicana con Sal
1/2 lb Los Altos Queso Fresco Los Altos, thinly sliced
4 Large plantains
4 Eggs, separate white from yolk
Enough oil to pan fry
3 dozen toothpicks
Tomato Sauce
2 T Olive oil
3 Tomatoes
¼ Onion
3 Garlic cloves
1 Cinnamon stick
Salt and pepper to taste
Battered Fried Stuffed Plantains
1) Peel the bananas and slice them in half, width wise. Slice them once more, lengthwise, in 3 even parts.
2) Place the Los Altos Queso Fresco Los Altos slices between the bananas, slightly pressing them together with both hands and using a toothpick to secure them.
3) Beat the 4 whites to soft peaks and then fold in the yolks.
4) Submerge the stuffed bananas into the whipped egg and completely cover them in the batter, holding the bananas by the toothpicks.
5) Fry them in oil at 350°F in a large deep pan until the batter, on both sides, is light brown and golden.
6) Remove with a slotted spoon and place them on a plate line with paper towels to absorb any excess oil.
7) Remove the toothpicks and reserve.
8) Serve the bananas along with the tomato sauce (recipe below) and garnish with Los Altos Crema Mexicana Con Sal.
Tomato Sauce
1) Blend the tomatoes, the onion and the garlic into a fine puree.
2) Sauté this blended mixture with two tablespoons of olive oil over medium heat.
3) Add salt and pepper and the cinnamon stick and cook for about 10 minutes at a bare simmer.
4) Add stock if necessary to have puree be more sauce-like in consistency, reserve.
