Avocado Dip
Serves: 8 to 10
Ingredients
Dip
5 oz Los Altos Queso Fresco Los Altos
½ cup Los Altos Jocoque
¾ cup Mayo
3 Garlic confit cloves
1 T Tarragon, finely chopped
¼ cup Cilantro, finely chopped
1 Lime, juiced
1 t Agave nectar
1 t Anchovy paste (optional)
3 Medium Avocados
Salt to taste
Pepper to taste
Garlic Confit
1 ½ cups Olive oil
30 Garlic Cloves
Garlic Confit
1) Place the olive oil in small saucepan with peeled, destemmed garlic cloves.
2) Cook on very low heat until garlic is soft, about 30-45 mins.
Note: Garlic can be stored for up to a month’s time if covered in oil and can be used whenever garlic is needed in a recipe. Be sure to use a clean spoon when removing garlic from the container.
Making Dip
1) Using a standup mixer, whip on high the Los Altos Queso Fresco Los Altos and the mayo until fluffy.
2) Then slowly add the Los Altos Jocoque, avocadoes, garlic confit, tarragon, cilantro, lime juice, agave nectar, and anchovy paste (optional), mixing on low to medium setting.
3) Mix until smooth, season with salt and pepper to taste. Remove from the mixer and pour into medium bowl.
4) Serve with either crostinis or raw vegetables. This dip is great for parties.
