Queso Panela in Tomato and Poblano Sauce
Serves: 4
Ingredients
24 oz Queso Panela Los Altos, cut into 1-inch slices
1 ½ cups of water
1 ½ lb tomatoes
½ medium onion
2 garlic cloves
2 sprigs of cilantro
2 tablespoons of oil
3 fresh poblano chiles, roasted, peeled, deveined and cut into strips
Salt
1) Dry roast the tomatoes, onion and garlic. Put them in the blender with the water, cilantro and a little salt. Liquefy.
2) Heat the oil in a large skillet; fry the slices of Queso Panela Los Altos on both sides until golden. Place them in a serving dish.
3) Add the sauce and the poblano strips to the skillet and cook for 15 minutes. Cover the cheese with the sauce and serve with warm tortillas.
