Veggie Lasagna
Ingredients
Los Altos Queso Quesadilla, grated
Los Altos Crema Mexicana Con Sal
Los Altos Queso Cotija, grated
6 poblano chiles
1 cup mushrooms, sliced
1 cup zucchini, diced
½ onion, julienned
Salt and black pepper, to taste
Oil
1)Cut the chili peppers in half, devein and remove the seeds.
2)Cook the chili peppers in boiling water with salt until they feel soft.
2)Meanwhile, in a pan with oil, cook the onion, mushrooms and zucchini and season with salt and pepper.
3)In a container greased with oil, place 2 poblano peppers as a base, add the mixture of vegetables, cream and cheese in layers. Repeat this process and finish the last layer with cheese.
4)Bake for 30 min at 350°F until the cheese is golden. Enjoy with a touch of Cotija Cheese.
