Stuffed Potato with Choriqueso
Ingredients

Los Altos Queso Cotija Molido
Los Altos Queso Menonita, grated
3 potatoes
½ lb chorizo
Chives
1) Cut the potatoes in half and cook them in water with salt.
2) Cook the chorizo. Remove the center of each potato and set aside in a bowl.
3) Mix the center of the potatoes with the chorizo,chopped chives, jocoque, and queso menonita.
4) Fill the potatoes with the mixture and bake them for 20 minutes at 350° F.
5) Top with some cream, chives, and sprinkle cotija cheese to taste. Enjoy warm.
