Potato and Poblano Tacos with Queso Cotija Enchilado

Ingredients
10 oz Queso Cotija Enchilado Los Altos
½ cup Crema Mexicana con Sal Los Altos
2 cups mashed potatoes
2 fresh poblano chiles, roasted, peeled, deveined and chopped
1 dozen 6-inch corn tortillas
Oil
2 cups shredded lettuce
Salt
1) Preheat the oven to 350°F.
2) In a bowl mix the mashed potatoes with the chopped chiles, the Queso Cotija Enchilado Los Altos and salt.
3) Brush each warm corn tortilla on both sides with some oil. Fill with the potatoes and cheese mix and roll to make the tacos. Place on a baking dish.
4) Bake for 30 minutes. Serve with the lettuce and the Crema Mexicana con Sal Los Altos.
