Pork Beans Guerrero Style
Ingredients
1 lb Los Altos Queso Cotija, diced
2 lbs of peruvian beans, cooked and refried
1/2 white onion
Pork lard to fry preferably or you can also use oil or vegetable shortening (optional)
¼ lb of chorizo or pork sausage
1 medium can sliced jalapeno peppers (chiles en vinagre)
1 can of pickled green olives (optional)
1) In a pan, over low heat cook the chorizo, then remove it from the pan and melt the lard in the same pan and fry the beans.
2) Add the cooked chorizo back to the pan , then add the cotija cheese in cubes and the sliced chile peppers.
3)To taste, add the vinegar from the chile peppers to the beans, if you add too much it can become very sour ,add the olives (optional). Enjoy.
