Grilled Panela with Peanut Sauce
Ingredients
1 lb Los Altos Panela Cheese, thick slices
Los Altos Queso Cotija Molido, to taste
1 cup of roasted peanuts
1 ½ cup chicken or vegetable broth
3 pasilla chiles, deveined and seedless
1 carrot, grated
3 garlic cloves
Vegetable oil
Salt
1)Roast the chiles in the comal and then soak the chiles in hot water for 10 minutes.
2)Grill the panela on both sides in a non-stick pan until browned and set aside.
3)Blend the chiles, the peanuts, the chicken broth, garlic, and salt.
4)In a pot, bring the peanut sauce to a boil over low heat and add cotija cheese while stirring.
5)On a plate, serve the cheese and bathe with the hot sauce and decorate with carrot. Enjoy it hot.
