Melted Queso Oaxaca with Chorizo
Serves: 4
Ingredients
1 package of Los Altos Queso Oaxaca
2 pieces of chorizo chopped
For the sauce:
2 tomatoes
1 serrano chili
2 tablespoons coriander
¼ onion
Salt and pepper to taste
1. In an iron skillet, place the chorizo and cook until brown, remove and drain excess fat.
2. Add the Oaxaca cheese and let it melt.
3. For the red sauce, grill the tomatoes, onion and chili in a pan. Grind these ingredients in the molcajete and add coriander, salt and pepper to taste.
4. Add the chorizo to the melted cheese and serve with the red sauce and tortillas.
