Hibiscus Tostada, Crema Mexicana con Sal and Cotija Cheese
Ingredients
Los Altos Crema Mexicana con Sal
Los Altos Ground Cotija Cheese, to taste
2 cups dry hibiscus
Water to boil the hibiscus
1/3 cup of brown sugar
1 chile habanero, chopped
Fresh oregano, salt, and black pepper to taste
Tostadas
1) Boil the Jamaica 3 times changing the water between each boil. Reserve the water to make delicious fresh Hibiscus water. In the last boil add the brown sugar.
2) Strain all the water from the hibiscus until it is dry and no longer drips. Let cool down.
3) In a separate bowl add the hibiscus, 1 cup of Mexican cream, 1 Tbsp of cotija cheese, habanero chili, oregano leaves, salt, and black pepper. Mix everything very well.
4) Spread cream to the tostada and add the hibiscus mixture, top with cotija cheese and enjoy.
