Chicharron de Queso with Guacamole
Serves: 4
Ingredients
10 oz. Queso Manchego Los Altos, shredded
2 avocados
2 tablespoons of finely chopped onion
2 tablespoons of finely chopped cilantro
1 serrano pepper, deseeded and deveined
Juice of 1 lime
Salt
- Heat a nonstick pan over medium heat. With ½ cup of shredded Queso Manchego form an 8”-circle. Cook for 5 to 8 minutes until completely golden removing the excess oil with a paper towel.
- Using a silicon spatula remove the cheese from the pan and immediately place it over an oiled rolling pin and carefully press the sides to shape it. Let cool for some minutes before removing from the rolling pin.
- Repeat until finishing all the cheese.
- Mash the avocados with a fork, add the onion, cilantro, serrano pepper, lime and salt. Mix and serve with the chicharron de queso.
