Baked Chicken & Salsa Poblana
Serves: 4 to 6
Ingredients
Baking & Searing The Chicken Breast
3 Whole boneless chicken breasts
2 T Butter
Salt and Pepper to taste
Salsa Poblana
1 cup Los Altos Crema Mexicana Con Sal
½ cup Los Altos Queso Del Rancho, crumbled
1 Large chile poblano, fire roasted, deveined and peeled
2 T Butter
1 T All purpose flour
¼ cup Milk
Salt and pepper to taste
Searing & Baking Chicken Breast
1) Preheat an oven to 350°F.
2) Slice each chicken breast in half and slightly flatten each piece.
3) Season with salt and pepper to taste and put it in the fridge for 10 minutes.
4) Prepare Salsa Poblana, instructions below.
5) Melt the remaining 2 tablespoons of butter in a pan and sear the chicken breasts over high heat to brown both sides.
6) Transfer the chicken to a small glass pan previously greased, cover with the poblano sauce, spread on top the Los Altos Queso Fresco Del Rancho.
7) Bake for 10-15 minutes or until chicken is cooked to your liking.
Salsa Poblana
1) Remove everything inside the chile and blend with milk.
2) Melt 2 tablespoons of butter in a small pan over medium heat, add the flour and stir.
3) Once flour is fully incorporated, add the chile sauce previously blended and the Los Altos Crema Mexicana Con Sal and stir in low heat until the mix boils and thickens.
4) Remove from the heat and finish seasoning to taste. You may prepare the sauce 6 hours in advance and reheat before using.
