1 lb Requesón Los Altos
½ medium onion, finely chopped
2 tablespoons finely chopped cilantro
Chiles
8 ancho chiles, open on the side and deveined
Enough water to cover chiles
2 tablespoons oil
1 onion, thinly sliced 
4 garlic cloves, whole
2 carrots, sliced
4 thyme sprigs
3 laurel leaves
1 ½ cups water 
¾ cup grated piloncillo (unrefined brown sugar)
1 ¼ cups cider vinegar
Salt
