6 oz Los Altos Queso Quesadilla, shredded

¾ cup Los Altos Jocoque
2 cups All purpose flour
½ cup Cornmeal
2 T Sugar
1 T Baking powder
1 t Kosher salt
½ t Baking soda
8 T Frozen Butter

2 Large Eggs, 1 egg for biscuit mix and 1 egg for egg wash with water

Shallot Herb Mix
1 T Thyme, minced
1 T Olive oil
2 Shallots, small diced
5 Garlic cloves, minced
