Ingredients

Salad Components
1 lb Los Altos Queso Fresco, diced
¾ cup Quinoa
2 T Unsalted butter
1 ½ cups Chicken stock
1  Bay leaf
1 sprig thyme
8 oz Baby spinach
4 oz Baby arugula
6 oz Cremini mushrooms, sliced
3 oz Pine nuts, toasted
4 T Parsley, finely chopped
1  Shallot, julienned or ½ red onion, julienned

Cotija Dressing (Yields 1 cup)
½ cup Los Altos Jocoque
2 oz Los Altos Queso Cotija Molido
2 T Lemon juice
5 Garlic cloves, smashed
2 T Sherry vinegar
2 t Dijon mustard
4 T Extra virgin olive oil
Pepper to taste, freshly ground
Salt to taste
