12 oz Queso Oaxaca Los Altos, cut in thin slices
7 oz Queso Manchego Los Altos, shredded
12 crepes
2 tablespoons butter
1 onion, finely chopped
2 garlic cloves, minced
1 lb zucchini blossoms, washed
2 cups cooked corn kernels
Poblano Sauce
1½ cups Crema Mexicana con Sal Los Altos
2 cups of milk
6 fresh poblano chiles, roasted, peeled and deveined
½ cup of water
2 tablespoons cornstarch
