9 oz Los Altos Queso Del Rancho
6 Chile poblanos, fire roasted and skin peeled
Enough oil for pan frying
3 Eggs, separated
1 cup All purpose flour
½ Onion, sliced in rings

Ranchera Sauce
1 T Olive oil
1 1/3 lb Tomatoes, large dice
1 Onion, medium rough chopped
3-4  Garlic cloves, rough chopped
1 cup Chicken stock
1 t Salt
3-4 Chiles serrano
¼ t Ground pepper
