Ingredients

Capirotada Components

3 cups Los Altos Queso Menonita, shredded
2 lbs bollillos (about 10 bollillos at 3 oz each), cut into 1 inch cubes
½ lb Butter, melted
5 Whole eggs
3 Egg yolks
3 cups Heavy cream
1 T Vanilla

4 cups of Piloncillo sauce (recipe below)
1 cup Peanuts, unsalted and shelled
20 Candied peanuts (Colaciones)
1 ½ cups Raisins
Colored sprinkles (grageas de colores) to taste

Piloncillo Sauce

3 ea Piloncillos or 3 cups of brown sugar
1 ½ T Whole cloves
5 ea Cinnamon Sticks, medium
1 ½ T Anise seeds

6 cups of Water
